Buttermilk Mix (U.S.) Buttermilk mix is a pre-mixed product used primarily to cook pancakes, U.S. biscuits, etc. In the U.S., Bisquick is a popular brand-name mix. Its ingredients include: enriched flour (bleached), vegetable shortening, partially hydrogenated soybean or cottonseed oil, baking soda, sodium aluminum phosphate, monocalcium phosphate, whey, salt, and dried buttermilk. Here is a U.K. recipe to make homemade buttermilk baking mix: * 490 g (1 lb 1 oz) all purpose flour * 2 tbsp baking powder * 1-1/2 tsp salt * 1 tsp cream of tartar * 1/2 tsp baking soda * 50 g (1-3/4 oz) dry buttermilk powder or nonfat milk powder * 270 ml (1/2 pint) vegetable shortening, chilled and cut into small pieces Combine dry ingredients in a food processor or large bowl. Process or sift until mixed thoroughly. Add chilled shortening and process with 5-7 quick pulses or cut in with a pastry knife until just blended. Makes about 1.7 kg (3-3/4 lbs). Transfer to a container with a tight fitting lid. Store in a cool dry place up to 10 weeks. |
