Selecting Fresh Apricots The fresh apricot harvest begins in mid-May and lasts for about eight weeks. When selecting fresh apricots, look for plump, well-formed, fairly firm fruit with a delicate aroma and golden orange color. Ripe fruit should be refrigerated.
