Pie Dough: Making Lattice Tops

When making homemade pie dough, to make a lattice top: 1. Once the dough has been rolled out to the desired thickness, roll a lattice pastry cutter over the surface, applying even pressure and in one direction only across the dough. 2. The resulting cuts can then be gently stetched out and egg washed before laying across the filling.
