Ginger Root

About Ginger root comes from tropical and subtropical regions and has a sweetly pungent and spicy taste.

Choosing Ginger root wrinkles with age. Look for ginger root that is firm with smooth skin and has the least number of knots. Do not substitute dried ginger in recipes calling for fresh. It is generally acceptable to break off the size piece you want at the store.

Storage Store tightly wrapped in the refrigerator for about three weeks. Or freeze up to six months, cutting slices as needed.

Cooking Peel it before using; you can then grate, grind, sliver, and use it in many savory dishes.

Nutrition Ginger is rarely eaten in quantities sufficient to provide significant nutrition.
