Peeling Carrots for Flavor The outermost layer of a carrot is often the tastiest part. When cooking carrots, you can impart the taste of the outer layer to the middle of the carrot by skipping the peeling. Instead, wash and cook the carrots in boiling water. Once they are soft (when you can stick a fork in them rather easily), remove them and place in cold water. The outermost layers peel away, and your carrots will taste quite delightful. |
