Bain Marie Bain marie is the French term for “water bath.” It is a cooking method in which a pan containing uncooked ingredients is placed into a larger pan partially filled with simmering hot water. Because it uses a gentle heat, bain marie is the preferred cooking method for custard and delicate sauces. |
