Mint-Caper Sauce

Serves 4       Preparation:  15 min.         Cooking: 0 min.          Total: 15 min.

  • 1/2 Cup capers, drained.
  • 2 Cup packed. fresh mint
  • 4 Tbsp fresh. lemon juice
  • 4 Tbsp shallots, minced
  • 2 tsp grated. lemon zest
  • 4 Fl Oz extra virgin olive oil

Place capers in the work bowl of a food processor and pulse until roughly chopped. Add mint, lemon zest, lemon juice, and shallots, and pulse until mint is roughly chopped.

Add olive oil in a slow, steady stream, pulsing until combined but still coarse. Transfer to a small bowl and use the same day.
