- 1/2 Cup capers, drained.
- 2 Cup packed. fresh mint
- 4 Tbsp fresh. lemon juice
- 4 Tbsp shallots, minced
- 2 tsp grated. lemon zest
- 4 Fl Oz extra virgin olive oil
Place capers in the work bowl of a food processor and pulse until roughly chopped. Add mint, lemon zest, lemon juice, and shallots, and pulse until mint is roughly chopped.
Add olive oil in a slow, steady stream, pulsing until combined but still coarse. Transfer to a small bowl and use the same day.
