Piccata sauce is a very simple, light creation that takes only a few ingredients and goes together quickly. It can be added to almost any kind of thinly sliced meat, ideally about 1/4 inch thick. If you can't buy it this way, it is easy to pound it between sheets of plastic wrap or in a plastic zipper bag. Fish fillets, shrimp, and scallops work well, too.
- 3 Tbsp butter
- 3 cloves garlic, minced.
- 1 Tbsp olive oil
- 3 Tbsp all-purpose flour
- 2 Cup chicken broth
- 1 1/2 Tbsp lemon juice
- 2 Tbsp capers, with juice.
In a saucepan, saute garlic in butter until transparent. Add olive oil and flour making a paste. Cook, stirring, until golden brown.
Add chicken broth a little at a time, and then add lemon juice. Stir over medium heat until thickened.
Add capers with juice.
Serve over chicken, pork, or seafood.
