Steak meets Bacon…what a concept!

We start with a juicy gourmet trimmed tender filet of beef and wrap it in a blanket of hickory smoked premium bacon for a flavor combination that is appreciated by meat lovers everywhere.  Great for dinner on the rill our in the broiler and try it sometime with an egg on top as an extra special breakfast treat.  We offer our bacon-wrapped filets in two sizes:

  • 4-oz. Filets approximately 1 1/4″ thick
  • 6-oz. Filets approximately 1 1/2″ thick


Always shipped frozen inside a reusable insulated cooler packed in dry ice.

A practice used by many great chefs known as barding is a cooking method designed allow very lean cuts of meat such as a filet to absorb additional moisture and fat to keep them from drying out.  This is often done using bacon of fatback and wrapping it around the leaner filet, The barded fat bastes the filet while it is roasting, adding flavor while also helping to hold in the filet's moist and succulent taste. In the cooking process you can choose to leave the bacon in place and serve the filet wrapped with the bacon or  approximately 15 minutes before the filet is finished cooking remove the bacon to allow the steak to brown.
