Our filet medallions are cut from the heart of the tenderloin and like their big brother the filet mignon, have the same melt-in-your mouth tenderness.  It's a great idea to have several of these on hand for those times when you crave the taste of a juicy filet but want to keep your eating on the lighter side.  A pair of these 2 oz. petite fillets is the ideal serving size to pair with a fresh green salad and a cup of mixed berries for a refreshingly light meal.

Click here to learn  about our tenderloin trim standards.  Our filets do contain the silver-skin, a thin membrane of connective tissue which you will want to remove.  It's really quite easy. Just take your time with a sharp boning or paring knife and make deliberate cuts away from you.
