Crosscut from the forward section of the short loin on a steer's middle back, T-bone steaks contain a strip of the top loin and a chunk of tenderloin, both great steaks that any beef lover will totally appreciate but in a T-bone, you get both in a single steak.
T-bone steaks are made for grilling. Generous bits of fat keep them moist while the tenderloin heart stays tender and flavorful. When grilling, use the bone as a handle to grab the steak with tongs and flip it. This avoids the need to puncture the meat with a fork and losing flavorful juice or sparking a flare-up.
